Continuous VS Batch Distillation
Continuous distillation has a great impact on the world drink industry since it gave to the distilleries the opportunity to produce spirits of high quality, grater scale, grate alcohol volume, with more economical way.
Continuous distillation is match more efficient, needs less energy consumption, and so it significantly reduces the carbon emissions.
In our distillery from the late 80’s the biggest percentage of our spirits are being produced with fractional distillation. Even today we are one of just a few distilleries in Greece that uses continuous distillation.
Our history
100 plus years of distillation history
1918
Two charismatic brothers George and Hercules Tzaras decided to add in their outstanding portfolio of occupations (they were already involved with olive oil and honey production, agriculture and more) a small distillery producing ethanol from grape marc. The first company name was TZARAS BROS.
1967
In 1967 second generation, brothers Apostolos and Evaggelos Tzaras (George Tzaras sons) get in charge. They construct new buildings and buy modern distilling equipment with high, for that time, technology. With the new equipment they pass from batch distillation to continuous distillation. In 1972 the new company’s name was P. A. TZARA.
1988
In 1988 “tsipouro” becomes an official drink and our company is one of the first distilleries that can produce “tsipouro” legally.
2011
3rd generation Nikos Tzaras (Apostolos’ son) and Gilles Wattier (Nikos’ brother-in-law) take the lead. Nikos as Mechanical Engineer together with Gilles as Oinologist combining the highest level of scientific knowledge in industrial production and oinology, managed to use the distilling equipment in a much more effective way and produce spirits of high quality. “AZEOTROPE” is introduced as company’s distinctive title.
2021
Unfortunately Gilles Wattier passes away at the early age of 47, being beaten from cancer. Even though he was just a few years member of the company his contribution through his knowledge, talent, character, and vision in getting our company at the position of distillery market that stands today was of high importance.
TODAY
Nikos Tzaras by himself is leading the company by investing in new technologies, reenforcing it’s stand in the distillery market and making more powerful its 100% B2B identity, having already as customers some of the greatest drink companies in Greeece.
